Brown the ground beef in a large, heavy pot over medium heat. Remove the beef with a slotted spoon and drain on paper towels. Drain off all but 1 tablespoon of the drippings. Add the onion, carrot, celery, and garlic to the drippings and sauté on medium until vegetables are tender and just starting to brown, 8 to 10 minutes. Add the tomatoes, beans, tomato sauce, vegetable-tomato juice, chicken stock, vinegar, salt, oregano, basil, pepper, and thyme and stir to combine. Increase the heat to medium-high and cook until the mixture starts to simmer. Reduce the heat to medium-low, cover, and simmer for 1 hour.
Fill a large saucepan with 2 quarts water and heat over high heat to boiling. Add the pasta and cook until it is al dente; drain. Add the pasta to the soup and simmer for 5 minutes. Makes 8 servings.
